FIESTA FAJITAS
Summer is here and it's always fun to throw a fiesta with good food and friends! It may be hard to think about throwing a fiesta when all we can think about is the party food that could be hurting us later. This recipe is a delicious way to enjoy a fiesta classic in a healthy way. Make sure to serve with a smile! Total Servings: 6 Serving Size: about 2 oz beef and 1/4 cup vegetables in one 6-inch flour tortilla These Fajitas are fun to make and eat! Ingredients: 1 lb extra lean ground beef (95% lean, 5% fat) 1 medium onion, diced 2 garlic gloves, minced 1/4 cup each diced red and green pepper 1/2 cup corn kernels (fresh or frozen) 1/2 cup diced tomato 2 tsp chili powder 1 tsp cumin 6 6-inch flour tortillas (for a healthier option choose whole wheat!) (To heat: wrap in foil and place in a 300°F oven until warm and soft or wrap 2 tortillas in two damp paper towels and microwave on high for 1 minute) 1 cup salsa (about 2 Tbsp per serving)
